Today – Quick and easy Banana Bread Recipe

Thisquick and easyvbanana bread recipe is probably the best in the whole world. ( well, my kids think so anyway!)  Bananas are so good for you it’s definitely a recipe for a superhero! This is a really good way to use it up over ripe bananas.

I am just so keen for my kids to see me use up any and everything and avoid waste from both a financial and an eco perspective. I think it is so great tio get them involved in this process and into a really good habit of thinking how can we avoid food waste

Quick and easy banana bread recipe

Preheat oven to 180C/gas mark 4

Ingredients for quick and easy banana bread recipe

  • I  big egg
  • 50g of butter (left out of the fridge for a bit to soften)
  • 3 very ripe bananas
  • 200g plain flour
  • 200g castor sugar
  • I teaspoon vanilla essence
  • 1 .5 teaspoon bicarbonate of soda
  • 1.5 teaspoon baking powder
  • I greased, small loaf tin

Method for quick and easy banana bread recipe

  • Mash bananas.
  • Put everything else in the bowl with bananas and mix really well.
  • Pop in loaf tin and into oven
  • When a skewer comes out clean you are done, (about 50 minutes)

How easy is that? Kids can do most of it and it tastes, looks and smells delicious!

    This looks delicious. My children love banana bread so I keep a stash of overripe bananas in the freezer which works brilliantly (and much better than throwing them away!)

    It’s baking as I type! Smells good! I tried with Splenda instead of the sugar because of my diabetes. I’ll let you know how it turns out!
